Vegan vs Vegetarian - Difference and Comparison | Diffen
"Neither vegans nor vegetarians eat meat. However, while vegetarians tend to consume dairy products and eggs, a vegan avoids all animal products, including eggs and dairy, and often inedible animal-based products, such as leather, wool, and silk. Vegetarianism is usually a diet, while veganism is a lifestyle. Vegetarians often choose their diet based on its reported health benefits or for religious or political reasons. In general, vegans have much stronger political beliefs regarding their diet, with some believing animals should be protected under many of the same laws that humans are."

Passez votre CAP de Pâtisserie avec Michel et Augustin | Hachette Pratique
Might be worth getting this.
Oddly high prices
Many food prices in France are both reasonable by US standards and in fact, many are dramatically lower than in the US. There are exceptions, however. One I noticed today was in a sale flyer from Carrefour - Spanish jambon (ham) WITH the bone, selling at 50% of its normal price. That, by itself, is attractive, but consider the starting price - 50 euros/kg. Very roughly that is about 25 USD/lb. At half-off, I guess it becomes somewhat attractive, but at the normal price, phew!
