Piece on the People's Pharmacy from WUNC today reports that this is the best way to judge food. Also, guest said best to keep ratio of carbohydrates to fiber at 10/1 or less. 5/1 best. 20/1 or higher, not good.

Tomatoes and chickens

In Nice, at this time, I have little trouble buying wonderful tomatoes at less than $1.25-50 USD/lb, but am unable to find any chicken breasts priced under $5 USD/lb. Both prices are pretty stable and seldom do we see sales here similar to those there that might drop chicken breast prices to $2/lb. I'd like to understand why these prices in both places work the way they do.

Interesting look at a bakery in France and how it deals with some employees. Much to learn from other countries! Note the delivery of products on a very big bicycle - or a big container mounted on a normal bike! Why don't we have this in NC? Or do we? Is COSTCO's bakery the only option? There is also a great discussion of how associations and mutual aid works a lot better than government assistance.

It's amazing to see new discoveries in something that has been around as long as chocolate.

Milk

Milk in France is almost never sold in containers bigger than 1 liter or about a quart. I always try to buy "lait ecreme" which is supposed to have had the cream removed, but I am not sure what that means in terms of fat. Now that I look at the label on a liter of Lactel Matin Leger (this one is also .5% lactose), it seems to say that saturated fats are .13 grams/100 ml. I do not know how we calculate fat levels in the US but this seems to be an apples and oranges exercise in trying to come up with a percentage. 33 calories for each of 100 ml as well. How many problems have arisen in NC over the way in which food is photographed, described, or presented? We ought to keep track. Someone should. Who has been deceived and with what result?

Bread mixes

In France, a Pain de Compagne bread mix comes in a 1 kg bag (2.2 lbs), and says it will make 2 breads of 750 kg each (because of adding water to the mix). Per 100 gram slice, it's 9.8 grams of protein and 320 calories. 70% of the ingredients are wheat flour.Bonpain is the maker. No website that I can find.
Will add a US maker.
