In looking at the flyers today for Harris-Teeter, Lowes and even Sprouts, I perceive that they are promoting, at least, a lot fewer organic products than I would have thought. Is the market still expanding or has it stalled, at least in NC?

La part des achats alimentaires de la restauration collective (dont le scolaire fait partie) est encore de moins de 4%. Beaucoup de freins persistent : Le bio coûte plus cher, nécessite une volonté politique et une formation des équipes (adaptation à de nouvelles recettes, produits de saison et travaillés frais, approvisionnement de proximité, réduction des portions pour éviter le gaspillage…). Pourtant certaines municipalités parviennent à constituer des repas bios. Comment font-elles ? Toutes les cantines peuvent elles se convertir au bio ?
